Vegetarian Swedish Meatballs garnished with parsley

A few week’s ago, my neighbor asked me if I could make Swedish Meatballs in the microwave. At the time, I was planning to make Italian-style meatballs and marina. I had no idea if I could make Swedish Meatballs in the microwave, especially since I’d never made Swedish Meatballs at all. My neighbor’s excitement, though, made me willing to give it a try. Boy am I glad I did! Not only were they easy to make, they were DELICIOUS! This recipe is now a favorite in our household, and I can’t thank my neighbor enough.

Let’s Cook!

  • 1/4 Cup Unsalted Butter
  • 1/2 Half and Half
  • 1/4 tsp. Parsley (Optional)
  • 1/2 cup Penne Noodles (Egg Noodles also work)
  • Two Cups Water
  • Two Beef Boullion Cubes
  • 1/2 tsp. Black Pepper
  • One Bag Frozen Vegan Meatballs
  • 1/4 All Purpose Flour
  • 1 Microwave Safe Bowl
  • 1 Microwave Safe Plate
  • 1 Large Liquid Measuring Cup
  • 1 Dry Measuring Cup
  • 1 Whisk
